Our herbs last longer too! Our focus on quality preservation techniques extends the shelf life of our herbs. Purists say dried herbs are best if used within one year. And that can be true, as the quality of all dried products degrades over time, especially when exposed to light, heat or humidity. Since our herbs are expertly preserved and don’t sit in a warehouse for months on end, we stand by the quality of our products for two years.

Many dried herb products on the market are the product of a global supply chain, meaning they’ve traveled the world before they reach your kitchen. You can be sure our herbs are grown, preserved and distributed with care.
It starts in the field. Our herbs are grown naturally in healthy soils, without the use of synthetic inputs. We hand harvest our herbs at the peak of flavor maturation and immediately load them into our expertly designed dehydrator. This ensures we’re preserving as many of their essential oils and flavor compounds as possible.
Our drying facility is licensed through the State of Washington and adheres to both state and federal food safety regulations. We strongly believe our commitment to food safety contributes to the quality and shelf life of the products we craft.

While we’re not yet certified Organic, we are on track. Since our beginning in 2019, we have been following organic practices to maintain our eligibility. It takes 3 years to transition, lots of recordkeeping, and a lot of money to become certified Organic.
Our focus on ecological sustainability is at the forefront of every decision we make. We intend to certify in the near future when the return on the financial investment will pay off.
Knowing how food is grown is important to everyone’s health. We are committed to transparency in that regard. If you have questions about our practices, we would love to hear from you.

Nope, it’s not our family name. We are rooted at the base of Smoot Hill, a small quartzite hill reaching 3,025 feet above sea level. As best we know, this name comes from a homesteader who came to the region in the 1800s.
Since 1968, the top of this local landmark has been stewarded by Washington State University. Also known as the Hudson Biological Reserve, it was named in recognition of Professor George Hudson, from whom it was purchased. Today the 800 acre reserve is home to remnant native Palouse prairie and forest habitats, where researchers, educators, and students can learn from and contribute to its conservation. The base of Smoot Hill is also home to Rose Creek Seed (a native prairie seed farm), Smoot’s Flavor Farm, other farmed acreage and natural habitat.
The history of this area doesn’t begin in the 1800s, of course. Smoot Hill and the broader Palouse region was an important place to many indigenous Plateau tribes. This area was an valued gathering place and contributed to the rich cultural diversity of the peoples who cared for and inhabited this region.
We continually grapple with the history of this land and its people. There are many flaws in our system and so much seemingly forgotten history. We seek to steward this land with respect to the broader ecology and history of the area.
